    That was a wonderful series, Zhuping–so instructive! I knew to preheat my brewing vessel and warm the dry leaves, but I didn't realize I should brew first with a small amount of water. Thanks to all of the Seven Cups staff for their efforts!

    I am a little confused here. I was under the impression that leaving tea leaves in the cup steeped in hot water for too long will make the tea biter but yet I see you are drinking from that giawan and I assume that those tea leaves have been in there for a bit of time. Doesn't it ruin the tast at all? I use a tea mug and only steep my green tea for 2 minutes before pulling it out of the water so that I don't get a biter tasting tea.
