Tai Ping Hou Kui Organic Green Tea 2012

Tai Ping Hou Kui Organic Green Tea 2012

This famous green tea from the town of Tai Ping has a very unusual long and flat leaf shape created by special hand processing unique to its style. Tai Ping Hou Kui is best enjoyed in a tall glass, allowing you to appreciate the beautiful shape of the leaf as you drink.

2012’s Taiping Houkui marks a change in style from years past. This year, two shoots of young leaves are pressed together into one hearty strip. This is a style of making Hou Kui that has appeared in just the last few years. The previous method yielded a pressed shard, 8.5 cm long, with one slightly opened bud and two or three leaves that were flattened and dried into a strip less than 1 cm wide. The new method yields a wider leaf (about 1.5cm) and presses together two sprigs of one bud and three leaves into a denser, wider strip. With this more robust strip, the tea is more durable, less prone to breakage, preserving whole leaves and thus preserving the lightness of their flavor as broken leaves will typically brew a stronger cup of tea.

Tai Ping Hou Kui’s harvest season begins in mid April and this tea was carefully chosen to be from the early part of the season, when the flavor of the leaves is at its softest. Many Hou Kui on the market today are made from the more abundant summer harvests. Tea picked in the summer, though less expensive, can have a very heavy flavor, lacking the traditional lightness Hou Kui is known for.

Even under the stress of infusion, the leaves of this Tai Ping Hou Kui maintain their whole shape and deep green color -- a fascinating tea to look at as well as drink.
